  • 1 tablespoon butter or oil
  • 1 tablespoon cornflour (mixed with 2 tablespoons water)
  • 1 teaspoon ginger-garlic paste (optional)
  • ½ teaspoon black pepper powder
  • Salt to taste
  • 2 tablespoons spring onions (chopped, for garnish)
  • 1 teaspoon soy sauce (optional)
  • ½ teaspoon sugar (optional)

Instructions:

  1. Sauté the vegetables:

    • Heat butter or oil in a pot over medium heat.
    • Add chopped onions and ginger-garlic paste (if using) and sauté until translucent.
    • Add the chopped carrots and cook for 2–3 minutes.
  2. Cook the corn:

    • Add sweet corn kernels to the pot and stir well.
    • Pour in the vegetable or chicken broth and let it simmer for 5–7 minutes.
  3. Thicken the soup:

    • Stir in the cornflour-water mixture slowly while stirring continuously to avoid lumps.
    • Allow the soup to thicken to your desired consistency.
  4. Season the soup:

    • Add salt, black pepper, soy sauce (if using), and sugar. Mix well and let it simmer for 2 more minutes.
  5. Blend (optional):

    • For a creamier texture, blend half of the soup and mix it back into the pot.
  6. Serve:

    • Garnish with chopped spring onions and serve hot.
