Ingredients:

- Fresh coriander leaves for garnishing

For the Pav (bread rolls):
- 8 pav (dinner rolls)
- 2 tablespoons butter

Prepare the Bhaji:
- Heat oil and butter in a large pan or kadhai.
- Add minced garlic and ginger. Sauté until they turn golden brown.
- Add chopped onions and green chilies. Cook until onions turn translucent.
- Add chopped tomatoes and cook until they become soft and mushy.

- Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix everything thoroughly.
- Add mashed potatoes and mix well until all the vegetables are well combined.
- Cook the mixture on low heat, stirring occasionally, for about 15-20 minutes until the vegetables are cooked and the flavors meld together.
- Mash the mixture using a potato masher until you get a smooth consistency. Add water if the mixture is too thick.
