  • 3 medium-sized potatoes, boiled and mashed
  • 2 cups mixed vegetables (such as peas, carrots, cauliflower, bell peppers), finely chopped
  • 2 large onions, finely chopped

  • 4-5 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, finely chopped (adjust according to your spice preference)
  • 1 tablespoon pav bhaji masala (readily available in Indian grocery stores)
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons butter
  • 2 tablespoons oil
  • Fresh coriander leaves for garnishing

For the Pav (bread rolls):

  • 8 pav (dinner rolls)
  • 2 tablespoons butter

Instructions:

  1. Prepare the Bhaji:

    • Heat oil and butter in a large pan or kadhai.
    • Add minced garlic and ginger. Sauté until they turn golden brown.
    • Add chopped onions and green chilies. Cook until onions turn translucent.
    • Add chopped tomatoes and cook until they become soft and mushy.

    • Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix everything thoroughly.
    • Add mashed potatoes and mix well until all the vegetables are well combined.
    • Cook the mixture on low heat, stirring occasionally, for about 15-20 minutes until the vegetables are cooked and the flavors meld together.
    • Mash the mixture using a potato masher until you get a smooth consistency. Add water if the mixture is too thick.
