Classic Christmas Fruit Cake

Ingredients:

  • For the Cake:

    • 1 cup unsalted butter (softened)
    • 1 cup brown sugar
    • 4 large eggs
    • 1 ¾ cups all-purpose flour
    • 1 tsp baking powder
    • 1 tsp cinnamon
    • ½ tsp nutmeg
    • ½ tsp cloves
    • ¼ tsp salt
  • Fruits and Nuts:

    • 2 cups mixed dried fruits (raisins, currants, chopped apricots, or cherries)
    • ½ cup chopped nuts (almonds, walnuts, or pecans)
    • Zest of 1 orange and 1 lemon

  • For Glazing (optional):

    • ¼ cup apricot jam
    • 1 tbsp water

Instructions:

  1. Prepare the Fruits:

    • Soak the mixed dried fruits in orange juice or brandy for at least 2 hours (or overnight for deeper flavor).
  2. Preheat and Prepare Pan:

    • Preheat oven to 300°F (150°C).
    • Grease and line an 8-inch round or square cake pan with parchment paper.
  3. Mix Dry Ingredients:

  4. Cream Butter and Sugar:

    • In a large bowl, beat butter and sugar until light and fluffy.
  5. Add Eggs:

    • Add eggs one at a time, beating well after each addition.
  6. Combine Batter:

    • Gradually fold the dry ingredients into the butter mixture.
    • Stir in the soaked fruits (along with any liquid), nuts, and citrus zest.
  7. Bake:

    • Pour the batter into the prepared pan and smooth the top.
    • Bake for 1 ½ to 2 hours, or until a skewer inserted in the center comes out clean.
    • Let the cake cool completely in the pan before removing.
  8. Glaze (Optional):

    • Heat apricot jam and water together, then brush over the cake for a shiny finish.
