  • 2 cups (400g) granulated sugar
  • 2 teaspoons baking soda

  • 1 cup (230g) unsalted butter, softened
  • 3 and 1/2 cups (420g) powdered sugar
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

  2. In a large bowl, sift together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.

  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined, but do not overmix.

  4. Gradually stir in the boiling water until the batter is smooth. The batter will be thin, but that's okay.
