Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 3 tablespoons unsalted butter
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup butterscotch chips (optional, for extra flavor and texture)

Instructions

  1. Make the butterscotch base:

    • In a saucepan, melt the butter over medium heat. Add the brown sugar and cook, stirring frequently, until the mixture is smooth and bubbly, about 2-3 minutes.
  2. Add cream and milk:

    • Gradually pour in the heavy cream and milk, stirring constantly until the sugar dissolves. Heat until the mixture is warm but not boiling.
  3. Prepare the egg mixture:

    • In a separate bowl, whisk the egg yolks with the granulated sugar until the mixture is pale and thick.
  4. Temper the eggs:

    • Slowly pour about 1/2 cup of the warm butterscotch mixture into the egg yolks while whisking constantly to avoid scrambling. Gradually pour this tempered egg mixture back into the saucepan.
  5. Cook the custard:

    • Continue cooking over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (around 170-175°F or 77-80°C). Do not let it boil.
  6. Strain and cool:

    • Remove the saucepan from heat and stir in the vanilla extract and salt. Strain the mixture through a fine mesh sieve into a bowl to remove any lumps. Let it cool to room temperature.
  7. Chill the mixture:

    • Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight to ensure it's thoroughly chilled.
  8. Churn the ice cream:
